Baking pans should always be placed on the grid, never on the oven bottom or on a baking sheet. Basically the mid of the cake will be placed in the middle of the oven. So: Flat pastries on the middle shelf and higher cakes on the lower until middle shelf. Cover the cake with aluminium foil, if the cake becomes to brown.
Some minutes before the end of the indicated baking time, test with a small wood stick if the cake is already done. Peak in the highest place of the pastry. If no dump dough rests or crumbs will stuck, the pastry is made.
